Olive Frittata

We have chickens and they lay eggs pretty steadily, so after a few weeks we have eggs everywhere and have to do something with them.  This is one way to use up a bunch, but still keep the calorie count from skyrocketing out of sight.  It's really fluffy, has an awesome flavor, and is pretty fast to make.





Olive Frittata

Serving 4-6


Ingredients You'll Need:


  • 2 Eggs, and 16 Egg Whites
  • 2 Tbsp. Flour
  • 1/2 tsp. Pepper
  • 1/2 tsp. Salt
  • 1 1/2 cups Mozzarella cheese, grated
  • 1 (3.8 oz) can sliced olives, drained
  • 3 Tbsp. dried chives (may substitute fresh)
  • 1/2 cup chopped tomato
  • 1/3 cup chopped ham (I used thinly sliced deli ham)
  • 1 1/2 tsp. Italian seasoning


Directions:


  • Preheat oven to 375 Degrees F.  
  • In a medium bowl, whisk 1 egg and 1 white withe the flour until well blended.  
  • Whisk in remaining eggs, pepper, and salt.  
  • Stir in remaining ingredients.  
  • Spread into an oiled casserole dish.  
  • Bake for 35 minutes or until golden and set.  Cut in desired increments.
