We have chickens and they lay eggs pretty steadily, so after a few weeks we have eggs everywhere and have to do something with them. This is one way to use up a bunch, but still keep the calorie count from skyrocketing out of sight. It's really fluffy, has an awesome flavor, and is pretty fast to make.

Ingredients You'll Need:
- 2 Eggs, and 16 Egg Whites
- 2 Tbsp. Flour
- 1/2 tsp. Pepper
- 1/2 tsp. Salt
- 1 1/2 cups Mozzarella cheese, grated
- 1 (3.8 oz) can sliced olives, drained
- 3 Tbsp. dried chives (may substitute fresh)
- 1/2 cup chopped tomato
- 1/3 cup chopped ham (I used thinly sliced deli ham)
- 1 1/2 tsp. Italian seasoning
Directions:
- Preheat oven to 375 Degrees F.
- In a medium bowl, whisk 1 egg and 1 white withe the flour until well blended.
- Whisk in remaining eggs, pepper, and salt.
- Stir in remaining ingredients.
- Spread into an oiled casserole dish.
- Bake for 35 minutes or until golden and set. Cut in desired increments.
