Every year around Thanksgiving and Christmas it is a tradition at our house to serve this. And it is never a disappointment! I love Lime Salad. It started with my Grandmother, and when she passed away, my sister Stacy took up the tradition. We always make a huge bowl of it, but it never feels like enough. So comforting and good!
Lime Salad
Ingredients you'll need:
- 30 ounce crushed pineapple (undrained)
- 2 small boxed Lime Jello
- 24 ounce small curd cottage cheese
- 8 ounce Cool Whip (whipped topping)
- 1/2 cup small marshmallows
Directions:
- In a small saucepan bring crushed pineapple to a boil over medium heat.
- Remove from heat. Stir in jello until dissolved.
- Chill until slightly thickened about 30 minutes.
- Stir in the cottage cheese, small marshmallows, and whipped topping. Refrigerate.
