Lime Salad

Every year around Thanksgiving and Christmas it is a tradition at our house to serve this.  And it is never a disappointment!  I love Lime Salad.  It started with my Grandmother, and when she passed away, my sister Stacy took up the tradition.  We always make a huge bowl of it, but it never feels like enough.  So comforting and good!




Lime Salad



Ingredients you'll need:

  • 30 ounce crushed pineapple (undrained)
  • 2 small boxed Lime Jello
  • 24 ounce small curd cottage cheese
  • 8 ounce Cool Whip (whipped topping)
  • 1/2 cup small marshmallows




Directions:

  • In a small saucepan bring crushed pineapple to a boil over medium heat.
  •   Remove from heat.  Stir in jello until dissolved.  
  • Chill until slightly thickened about 30 minutes.  
  • Stir in the cottage cheese, small marshmallows, and whipped topping.  Refrigerate.
