Homemade Cranberry Sauce

It's the New Year, and my resolution was to continue to lose weight and feel better!  I'll be posting the remainder of my holiday recipes over the next few weeks.  And although they weren't all 'healthy', they are recipes we enjoyed during Christmastime and want to share with you all.

Which brings me to the first recipe.  Cranberry sauce.  But not just any cranberry sauce.  Homemade Cranberry sauce.  And it is so good!




Homemeade Cranberry Sauce



Ingredients you'll need:


  • 1 (12 ounce) bag fresh cranberries
  • 1 1/2 cups sugar
  • 4 oranges, zested, peeled and diced
  • 3/4 cup orange juice


Directions:

  • Take the 4 oranges, and zest the rind off of them, peel them, and remove the membrane from around the orange pieces.  Next, add sugar, cranberries, orange juice, and orange pieces into a medium saucepan; bringing to boil over medium-high heat.
  • Reduce heat to medium, cook 12 minutes or until the cranberries pop.  Remove from heat, stir in rind.  Cool completely.  Serve chilled or at room temperature.
