French Onion Soup

This is one of my families favorite soups. It's really fast and simple, but the flavors are pure comfort.  On a cold day this really hits the spot!







French Onion Soup


Minutes to Prepare: 10
Minutes to Cook: 30
Number of Servings: 6


Ingredients
  • 4 Sweet Onions (I use yellow) 
  • 1 T of butter/margarine
  • 2 cans of beef broth 
  • 1 Beef Bullion Cube
  • Mozzarella cheese, grated 
  • French Bread 
Directions
  • Cut onions to own desire. I use a dicer which takes all of about 3 minutes, and it makes small squares.  I love love love the thing. 
  • Place in large skillet with butter. 
  • Cook until onions are light brown and see-through
  • In medium pot add broth and bullion cubes. 
  • When onions are cooked add to broth. 
  • Simmer for 20 minutes. 
  • You can simmer longer for greater taste. 

Put into bowl. Sprinkle with mozzarella cheese to really give it that added flavor.  This is very low calorie, so adding a slice of bread and a little cheese won't overdo your calories for the meal =)
